It consists of small, seasoned pieces of meat, seafood, or vegetables. These morsels are placed on skewers and grilled over hot charcoal. Most versions are served with a flavorful sauce. A peanut-based sauce is the most common accompaniment.

People often enjoy satay with rice cakes like ketupat or lontong. Side dishes such as cucumber or pickled vegetables are also popular. This dish is a vital part of street food culture and festive celebrations across many nations.

The preparation of satay follows a specific culinary process. First, a cook selects proteins like chicken, beef, goat, pork, or seafood. These pieces are seasoned with regional spices. Common ingredients include lemongrass, turmeric, coriander, and galangal.

The seasoned meat is then threaded onto skewers, often made of bamboo. The skewers are grilled over charcoal, sometimes made from coconut shells. This method provides a distinct smoky flavor to the meat. Finally, the grilled skewers are served with sauce and various sides.

Satay has many distinct regional types and variations. In Indonesia, sate Madura and sate Ponorogo are famous chicken varieties.

Central Java offers sate klathak, which uses mutton seasoned only with salt. In Bali, cooks prepare sate lilit. This version uses minced meat mixed with grated coconut and spices. Sate lilit is often wrapped around lemongrass stalks. In Sumatra, sate Padang features a thick, spicy sauce made from turmeric. Other unique versions include sate kelinci, which is made from rabbit.

The history of satay is a story of global cultural exchange.

It evolved through the meeting of several different food traditions. Middle Eastern kebabs were introduced by Muslim traders. South Asian merchants from Tamil and Gujarati backgrounds brought their own seasoning techniques. Chinese migrants contributed the use of bamboo skewers and bite-sized portions. These influences merged in the busy port cities of Java, Sumatra, and the Malay Peninsula. This hybrid style was perfect for street vending.

Regional adaptations have made the dish incredibly diverse. In Malaysia, satay is often served with ketupat and raw onions.
