Making rendang is a slow and careful process.

First, cooks simmer meat in coconut milk and many spices. They use an uncovered pot or a pan for this. They cook it slowly until the oil separates from the liquid. Once the oil is free, the meat begins to fry. It fries right in its own sauce. This creates a thick and tasty glaze on the meat. The name "rendang" actually comes from this frying method. In the Minangkabau language, "marandang" means cooking food slowly until it is dry.

The history of this dish is very long and interesting.

Some of the spices used come from India. Ingredients like ginger, garlic, and turmeric are very common. Traders from India likely brought these traditions to West Sumatra. The Portuguese also played a part in its history. They brought chili peppers to the area after 1511. This changed how the dish tasted over time. Some people believe Portuguese cooking methods helped shape how the meat is fried. This mix of cultures helped rendang grow into what it is today.

There are many records of rendang from a long time ago.
