Making the pie involves mixing several ingredients together. Bakers often use canned pumpkin purée to start. They mix the pumpkin with eggs, sugar, and evaporated milk. They also add pumpkin pie spice to give it flavor. This spice blend usually includes cinnamon, ginger, nutmeg, and cloves. Sometimes they add allspice too. The mixture is poured into a single pie shell.

A modern custard-style pie appeared in a 1796 cookbook called American Cookery.
