These plants grow slowly over a long time. They grow until their seeds are fully mature. The skin becomes a tough, hard rind. This hard skin helps the squash stay fresh. People can store them to eat all winter. Most people cook the squash before eating it. They do not usually eat the hard skin.

Many different types of squash exist. Some are small or medium in size. They might have bumpy or warty skin. Round and orange ones are called pumpkins. In Australia and New Zealand, people call all winter squash pumpkins.

One kind is the calabaza. It is common in Cuba and the Philippines. Another popular kind is the butternut squash. These shapes and colors can vary a lot.

Growing squash takes a specific way of working. The seeds need warm soil to start growing. They do not like cold ground. Farmers wait for the fruit to turn a deep color. They also wait for the skin to get hard. In the Northern Hemisphere, this happens in September or October. This timing avoids the heavy frost.

Scientists group these plants in the genus Cucurbita. At least five species have been grown by people. These are C. argyrosperma, C. ficifolia, C. maxima, C. moschata, and C. pepo. Squash grows in many places like Japan and Italy. It also grows in tropical America and the United States. The calabazas in the West Indies are not all the same. They vary greatly in size and shape.

Eating squash provides many good things for the body. Raw squash is mostly water. It is about 90% water. It also has 9% carbohydrates and 1% protein. A 100 gram serving has 34 calories. It provides vitamin C and vitamin B6. It also has beta-carotene, which is a provitamin A. The seeds are special because they are rich in oil.
