Puff pastry is a light and flaky food.

It is made by layering fat into dough. This dough starts with wheat flour and water. A cook adds solid fat, like butter, into the mix. Then, they roll and fold the dough many times. This way is called lamination.

Each fold creates many thin layers. During baking, the water in the fat turns to steam. This steam makes the layers puff up. The heat also makes the layers crisp.

Making this pastry takes a lot of work. The dough must stay cool at 16 °C (60 °F). This stops the fat from melting too soon. Bakers must let the dough rest between folds. This helps the dough hold its shape. Some recipes are faster and called "rough puff." These use less folding or small bits of fat.
