It is a very important symbol for the people living there. Many people around the world know it as a great Spanish food. The name actually comes from the wide, shallow pan used to cook it. In the Valencian and Catalan languages, the word paella means frying pan.

Some people use the name paellera to talk about the pan itself. This dish is a wonderful way for people to come together and share a meal.

There are a few different ways to prepare this rice. The traditional version is called paella valenciana.

This recipe uses rice, olive oil, rabbit, chicken, duck, and snails. It also includes beans, tomato, and salt. Saffron is often used to give the rice a bright yellow color. Some cooks also use turmeric or paprika instead of saffron. Another version is paella de marisco, which uses seafood instead of meat. There is even a mixed version called paella mixta that uses both meat and seafood.

This dish has a very long history in Spain. Rice was first grown in the area around the 10th century.

Farmers near the Albufera de València lagoon likely invented the modern dish. They would gather in the rice fields to cook with what they found. They used ingredients like snails, birds, and beans. In the 1800s, the dish became more popular for outings in the countryside. By 1840, newspapers even began using the word paella to describe the recipe itself.

Cooking paella is a special process that involves many steps.

Traditionally, it is cooked over an open fire. Cooks use branches from orange or pine trees for the fuel. This creates an aromatic smoke that flavors the food. A tasty layer of toasted rice can form at the bottom. This crunchy layer is called socarrat in the Valencian language. Many people in Valencia think the socarrat is the best part of the meal.

Paella is a dish that has traveled far from its home.

It is popular in the Mediterranean and all over the world. In the Philippines, people make a version called arroz a la valenciana. They use a different kind of rice called glutinous rice. Sometimes, people make giant paellas for big festivals or to break records. In 2001, a chef named Juan Galbis made a huge paella that fed 110,000 people. Even as it changes, paella remains a beloved way to celebrate food.
