Many people call the pan a paellera.

There are different ways to make this meal. Paella valenciana is the traditional recipe. It uses rice, olive oil, chicken, rabbit, duck, and snails. It also has beans and tomato. Saffron gives the rice a bright yellow color.

Some people also make paella de marisco. This version uses seafood instead of meat. There is even a mixed version called paella mixta. It uses both meat and seafood.

Long ago, farmers made this for lunch. They used ingredients found near the Albufera lagoon. They cooked it over an open fire. This fire gives the food a special smell.

At the bottom of the pan, the rice can get crunchy. This layer is called socarrat. Many people think the socarrat is the best part to eat! Paella is a wonderful dish meant for sharing.
