Napa cabbage

language culture Maturity 5-7 Next article →

Napa cabbage, scientifically known as *Brassica rapa* subsp. *pekinensis*, is a significant annual vegetable within the Brassicaceae family. This family, often called the mustard or cabbage family, also includes broccoli, cauliflower, and kale. Napa cabbage is highly valued in East Asian cuisine for its mild, aromatic flavor and its nutritional profile. It contains approximately 26 mg of vitamin C and 40 mg of calcium per 100 grams.

Because it is a cool-season annual, it thrives when days are short and temperatures remain mild.

The physical structure of the plant is quite distinct. It forms an oblong or oval head composed of densely arranged, crinkly leaves. These leaves are typically lime green with prominent, thick white veins. The innermost leaves, located at the center of the head, transition to a light yellow color.

The plant grows in basal rosettes, which are circular clusters of leaves. While the plant eventually produces yellow flowers with a characteristic cross-shaped arrangement, it is usually harvested during its vegetative growth stage before flowering occurs.

Cultivating napa cabbage requires precise management of soil and water. The plant grows best in deeply loosened, medium-heavy soil, such as sandy loam. It prefers a soil pH between 6.0 and 6.2 with high organic matter content. Water is critical throughout the entire growth cycle, especially during the head-forming stage. If the plant lacks sufficient water while forming its head, it may suffer from calcium deficiency. This deficiency causes the leaf tips inside the head to die, making the crop unmarketable.

Farmers use various methods to ensure a successful harvest. One common approach involves growing seedlings in a greenhouse for two to three weeks before transplanting them into the field. This method can help achieve an earlier harvest. For fall crops, farmers may use direct seeding instead. The seeds are very small, with a thousand-kernel weight of only 2.5 to 2.8 grams. Professional growers often use disinfected seeds to prevent the onset of diseases. Once the plants are established, they can be harvested by hand approximately 8 to 12 weeks after sowing.

The history of napa cabbage is deeply tied to the Yangtze River region of China. The earliest records of its cultivation date back to the 15th century. From China, the vegetable spread to Korea and Japan. During the 19th century, the Chinese diaspora helped distribute the crop to Europe, America, and Australia. In the United States, the supply of European seeds was interrupted by a blockade during World War I. Consequently, US research institutes and the seed industry in Oregon and California developed new, domestic seed stocks.

Napa cabbage carries significant cultural meaning, particularly in China, where it can symbolize prosperity. A famous example is the Jadeite Cabbage sculpture held in Taiwan's National Palace Museum. In Korea, the vegetable is the essential ingredient for *baechu-kimchi*, a staple fermented dish. In Northeast China, it is used to make *suan cai*, or fermented cabbage. Culinary uses vary widely, ranging from being eaten raw as a wrap for pork or oysters to being used in hot pot meals and stir-fries with tofu or mushrooms.

Because of its widespread use, the vegetable has many regional names. In Japan, it is called *hakusai*, while in Korea, it is known as *baechu*. The name "napa" itself comes from the Japanese word *nappa*, referring to vegetable leaves. In Australia, it is often called *wombok*, and in New Zealand, it is known as *wong bok*. These names are often variations of the Cantonese term *wong ngaa baak*. Even in the United Kingdom, you might find it labeled as "Chinese leaf" or "winter cabbage."
