Murad changed how the empire was organized. In the 1360s, he conquered the city of Adrianople. He made Adrianople the new capital of the Ottoman Sultanate. He grew the empire into Southern Europe. He brought most of the Balkans under his rule. He forced the emperor of Bulgaria and the emperor of Byzantium, John V Palaiologos, to pay tribute. Tribute is a payment made by one ruler to another. Murad divided his lands into two provinces. These were Anatolia in Asia Minor and Rumelia in the Balkans.

To expand his realm, Murad fought many wars. He fought the Karaman beylik in Anatolia. He also fought groups in Europe like the Serbs, Albanians, Bulgarians, and Hungarians. In 1371, his lieutenant Lala Şâhin Paşa defeated a Serbian expedition. This group was led by King Vukašin and Despot Uglješa. In 1385, the Ottoman army took the city of Sofia. However, the Ottomans also faced losses. In 1386, Prince Lazar Hrebeljanović defeated an Ottoman force at the Battle of Pločnik. This caused heavy casualties for the Ottoman army.

Both Prince Lazar and Sultan Murad I died during this conflict. There are different accounts of how Murad died. Some Western sources say a Serbian knight named Miloš Obilić assassinated him with a knife. Other Ottoman chroniclers say he was killed while inspecting the battlefield.

After the battle, a struggle for power began. Murad's older son Bayezid I took charge of the Ottoman forces. He was in charge of the left wing of the army. Murad had another son named Yakub Bey. Yakub Bey was in charge of the other wing. Bayezid called Yakub Bey to the command tent. When Yakub Bey arrived, he was strangled. This left Bayezid as the only claimant to the throne.
