Monosodium glutamate

physical science Maturity 7-9 Next article →

Have you ever tasted something deeply savory? This special flavor is called umami.

It is a taste found naturally in many foods. You can find it in ripe tomatoes and in cheese. MSG, or monosodium glutamate, is a way to bring this taste to your meals. It is a salt made from glutamic acid.

Cooks use it as a flavor enhancer. This means it makes the savory parts of food taste even stronger. It can help balance and blend different tastes together. You might find it in ramen, stews, or even savory snacks.

How does MSG work to change flavor? It works by boosting savory taste-active compounds in your food.

The best amount to use depends on the dish. For example, in a clear soup, adding too much can actually lower the pleasure score. Using more than one gram of MSG per 100mL might make it less tasty. MSG is often used with other things to make it even better. These include salt and two other additives called disodium inosinate and disodium guanylate. Some people even make a "super salt" by mixing these together. This creates a very strong savory effect.

Scientists have been studying these tastes for a long time. In 1866, a German chemist named Karl Heinrich Ritthausen discovered glutamic acid. He found it by treating wheat gluten with acid. Later, a Japanese scientist named Kikunae Ikeda wanted to study umami more closely.

In 1908, he isolated glutamic acid from a seaweed called kombu. He wanted to recreate the delicious taste of Japanese broth. He tested many different salts to see which worked best. He found that monosodium glutamate was the easiest to use and tasted the best. The Suzuki brothers began selling it commercially in 1909 under the name Ajinomoto.

Today, most MSG is made through a way called bacterial fermentation.

This is a process similar to how we make yogurt or vinegar. Workers use tiny living things called Corynebacterium species. These bacteria are grown with sugar from things like sugarcane or molasses. The bacteria then release amino acids into a liquid. This liquid is then filtered and turned into a white, crystalline powder. This powder is mostly glutamic acid, with about 12.28% sodium. It is a very stable powder that does not break down when you cook with it.

Many people have wondered if MSG is safe to eat. Some people believe it causes headaches, a feeling sometimes called "Chinese restaurant syndrome."

However, many scientific studies have looked into this. The U.S. Food and Drug Administration calls MSG safe to eat. Most tests show that it does not cause discomfort when eaten with normal amounts of food. Even in Australia and New Zealand, experts say there is no convincing evidence of serious illness. While a few people might feel unwell if they eat very large amounts without food, it is not a common problem. For most people, MSG is just a tasty way to enjoy savory food.
