She first started figure skating when she was only four years old. Her older brother, Pier-Alexandre, inspired her to switch to hockey at age five. She remembers playing outdoors with him as one of her best childhood memories. Her interest in professional hockey grew when she watched the 2002 Olympics on television. That tournament saw the Canada women's team win their first gold medal in over 50 years. This moment helped shape the player she would eventually become.

Poulin's career has taken her to many different teams and places. She grew up in Beauceville, Quebec, and started playing for the Montreal Stars at age 17. Later, she moved to play college hockey for the Boston University Terriers. While at Boston, she became the first player to win the Hockey East Rookie of the Year award. She then returned to play for Les Canadiennes de Montréal in the CWHL. In that league, she won the Clarkson Cup and was named the most valuable player three times. She even broke records for points and goals during her time at Boston.

She has also worked hard to change how women's hockey works.

After her old league ended, she joined the Professional Women's Hockey Players Association. This group worked to make women's hockey more professional for everyone. Poulin played a key role in creating the new Professional Women's Hockey League. She wanted to build a strong league for the next generation of players. In 2023, she signed with the Montreal team to help lead this new era. Her leadership helped make the new league a reality for many athletes.

Many impressive numbers show just how much she has achieved. She is the first person to score 20 Olympic goals in modern ice hockey. In 2025, she was named the IIHF Female Player of the Year. She has won four World Championship titles with her national team. For the Montreal Victoire, she won the Top Goal Scorer award with 19 goals in 30 games. She was also the first female player to win the Northern Star Award. These honors prove she is a leader on and off the ice.
