Lobsters are decapod crustaceans belonging to the family Nephropidae. They are marine invertebrates characterized by long bodies and muscular tails.

These animals live on the sea floor in various environments. They inhabit rocky, sandy, or muddy bottoms. Their range extends from the shoreline to the edge of the continental shelf. Lobsters are highly prized as seafood and serve as major economic commodities. This makes them very important to coastal communities around the world.

A lobster's body is divided into two main parts: the cephalothorax and the abdomen. The cephalothorax is the head and thorax fused together under a hard shell called a carapace. This carapace is made of chitin, a tough material that forms their exoskeleton.

The head contains antennae and antennules, which act as sensory organs in murky waters. They also have compound eyes that feature a reflective structure above a convex retina. The thorax holds several appendages. These include maxillipeds, which function as mouthparts, and pereiopods, which are used for walking. The abdomen contains pleopods, or swimmerets, used for swimming. A tail fan, made of uropods and a telson, completes the body.

Lobsters belong to the order Decapods, which means "ten-footed." This name comes from their ten legs. The first three pairs of legs bear claws, known as chelae. The first pair of claws is usually much larger than the others.

Because they have a hard exoskeleton, lobsters must undergo moulting to grow. During moulting, the lobster sheds its old shell to allow for a larger one. This process is physically demanding and dangerous. Between 10% and 15% of lobsters die from exhaustion during this stage. As they age, moulting becomes even harder. Eventually, moulting ceases, the exoskeleton degrades, and the lobster dies.

While most lobsters are bluish-green or greenish-brown, rare color variations exist. These colors help them blend into the ocean floor. However, genetic factors can cause atypical colors. For example, an albino lobster is extremely rare, occurring in only 1 in 100,000,000 individuals.

Other rare colors include blue, orange, yellow, and calico. A "split-colored" lobster is often a hermaphrodite. These rare specimens are usually released back into the wild or given to aquariums. When cooked, almost all lobsters turn bright red. This is because heat breaks down a protein called crustacyanin. This protein normally suppresses the orange color of a chemical called astaxanthin.

Lobsters are remarkably long-lived animals. In the wild, they can live for an estimated 45 to 50 years. Scientists believe this longevity is linked to an enzyme called telomerase. This enzyme repairs repetitive sections of DNA called telomeres at the ends of chromosomes. Most vertebrates lose telomerase in adulthood, but lobsters continue to express it. This allows them to grow throughout their lives and add new muscle cells at each moult. This biological process helps them reach impressive sizes. The largest lobster ever caught was found in Nova Scotia, Canada.

In the ocean, lobsters play a complex role in the ecosystem. They are omnivores that eat fish, mollusks, worms, and some plants. They also scavenge for food. While they are known to practice cannibalism in captivity, it is also seen in the wild. Researchers observed wild cannibalism in Maine in 2012. They believe this happened because a population explosion occurred after natural predators disappeared.

Lobsters also host symbiotic animals. A genus called Symbion lives exclusively on lobster gills and mouthparts.

Humans have a long history of consuming lobsters. Evidence shows they were a regular food source for ancient fishing communities. During the Roman period, they were a popular delicacy. A mosaic in Pompeii shows that Romans valued spiny lobsters. In the Viking period, increased marine activity led to higher shellfish consumption.

By the medieval period, lobsters were appearing in French cookbooks like Le Viandier de Taillevent. Today, they are a global culinary staple. They are served in many forms, such as bisque, rolls, or steamed whole.
