People harvest these roots in the autumn. They wait two or three years after planting to harvest them.

The root has a special part called glycyrrhizin. This part is 30 to 50 times sweeter than sugar. It has a tart taste that lasts a long time. People use this sweetness in many treats. In the Netherlands, people eat a sweet called drop. Some people even eat dried sticks of the root. They used to call these sticks "sweet wood."

Many cultures have special ways to use liquorice. In Italy, people chew on the root to freshen their mouths. In the Arab world, people make a cold drink called Erk al-sous. This drink is popular during Ramadan.
