You might eat it raw in a fresh green salad. It also works well in sandwiches, wraps, or even in warm soups. Some people even try grilling it! There is even a type called celtuce, which is grown for its stems.

While we mostly eat the leaves, this plant has been important to humans for a very long time. It has even been used in medicine and religious ceremonies.

Growing lettuce is a specific way of working with nature.

The plant grows best when temperatures stay relatively low. If the weather gets too hot, the plant starts a process called bolting. Bolting is when the plant grows a tall stalk with small yellow flowers.

When this happens, the leaves become bitter and are not good to eat. To keep the leaves tasty, farmers usually harvest them before the flowers appear. The plants can live anywhere from 65 to 130 days from the time they are planted.

Humans have been farming lettuce for thousands of years.

Ancient Egyptians were some of the first to farm it. At first, they did not eat the leaves for food. They grew the plant to get oil from its seeds. The Egyptians even saw lettuce as a sacred plant. It was used in festivals for the god Min. Later, the plant spread to the Greeks and then to the Romans. The Romans gave it a name that means "milk" because of a white liquid called latex that comes from the stems.

There are many different kinds of lettuce found in gardens today.

Learning about lettuce helps us see how plants change over time.

Through selective breeding, humans have changed lettuce to have larger leaves and better tastes. We have also made the seeds larger and reduced the amount of bitter latex. Scientists even study the genetics of lettuce to help it resist insects and fungi.
