People often call them leafy greens or simply greens. There are nearly 1,000 different species of plants with leaves we can eat. Most of these come from short-lived plants like lettuce or spinach. However, some leaf vegetables come from woody plants too. People can eat them in many ways. If you eat them raw in a salad, they are salad greens. If you cook them, they are called pot herbs.

These plants have a very interesting way of working. They use a process called photosynthesis to make food. This means they use sunlight to create energy. Because of this, their leaves have a lot of vitamin K. This vitamin is part of how the plant works. Some people must be careful with these greens. For example, people taking a medicine called warfarin must limit how much they eat. This is because the vitamin K can affect how the medicine works.

Growing and keeping these vegetables is a big job. Sometimes, diseases can cause up to 50% of the vegetables to be lost. These diseases come from fungi, bacteria, or sometimes viruses. To stop this, farmers use temperature-controlled storage. It is also important to keep the leaves from getting damaged. Damaged leaves can let germs inside more easily. Using clean water to wash the vegetables is also a very important step.
