Lasagna refers to a type of pasta made in wide, flat sheets.

In Italian cuisine, it is a versatile ingredient used in many ways. It can be served in a broth or as a famous baked dish. The baked version is created by stacking layers of pasta with various fillings. These fillings often include ragù, which is a sauce of ground meats and tomatoes. Other layers might feature béchamel sauce, vegetables, or cheeses like ricotta, mozzarella, and Parmesan. This layering process creates a rich, textured meal that is cherished across Italy.

The construction of lasagna involves specific assembly steps. First, cooked pasta sheets are layered with chosen fillings. Common fillings include creamy béchamel or savory ragù. Some recipes add cheeses or vegetables between the sheets. Once the layers are stacked, the dish is topped with grated cheese. Finally, the assembly is placed in an oven to bake. This method allows the flavors of the meat, sauce, and cheese to meld together.

There are many different types of lasagna pasta shapes and styles. Mass-produced sheets with ruffled edges are called lasagne, sciabò, or sciablò. Modern baked dishes often use long, narrow rectangular shapes known as lasagnette. However, some traditional versions still use a square shape. In the Veneto region, factory-made sheets are called bardele or lasagnoni. Other narrow varieties include lasagne, lasagnotte, and cappellasci in Liguria. These variations show how pasta shapes change based on local production and regional preference.

The history of lasagna stretches back to ancient times and the Middle Ages. The name may come from the Greek word laganon, meaning a flat sheet of dough. Another theory suggests it comes from lasana, meaning a trivet or pot stand. In ancient Rome, a similar dish was called lasanum. The first written reference to lasagna appeared in a 1282 ballad. In 1285, the Liber de Coquina provided an early recipe. This version used fermented dough sheets boiled with cheese and spices. It was eaten using a small, pointed stick and was considered relatively expensive.

Regional variations in Italy offer a wide range of ingredients and traditions. In Bologna, the dish uses ragù, béchamel, and Parmesan cheese. Ferrara features green pasta made with spinach, sometimes including pancetta or chicken livers. In Naples, a version for Carnival uses sausage, fried meatballs, and eggs. Another southern recipe for Christmas uses capon broth, veal meatballs, and prosciutto. In the Marche region, vincisgrassi includes mushrooms and offal like sweetbreads. These specific recipes are often tied to important religious festivals and local pride.

Preparation methods also differ between the north and the south of Italy. In northern regions, pasta dough was traditionally made with flour and eggs. This was because semolina wheat was not easily available there. In southern Italy, cooks traditionally used semolina and water. In the Emilia-Romagna region, a professional called a sfoglina might roll the dough by hand. They aim to make the sheets as thin as paper. Today, industrial dried sheets are made from durum wheat semolina, which is the only wheat allowed for commercial dried pasta.

Lasagna also reflects the history of global trade and movement. Interestingly, original lasagna recipes did not contain tomatoes. Tomatoes did not arrive in Europe until after Columbus reached the Americas in 1492. The first tomato recipes in cookbooks appeared in Naples around 1692. As the dish spread, it changed to fit new cultures. For example, Italian-American recipes often use ricotta cheese instead of the northern béchamel sauce. This shows how a single culinary tradition can evolve through migration and new ingredients.
