Sheep meat, or sheepmeat, is one of the most common types of meat consumed globally.

It comes from the domestic sheep, known scientifically as Ovis aries. People categorize this meat into three main types based on the age of the animal. These categories are lamb, hogget, and mutton. The age of the sheep changes the texture and flavor of the meat. Younger animals produce meat that is smaller and more tender. Older animals produce meat that is darker and has a much stronger flavor.

Classification depends on the sheep's teeth and age. Lamb comes from a young sheep less than one year old. In Australia, the definition includes animals under 12 months or those without permanent incisor teeth in wear. In Britain, the definition requires zero permanent incisor teeth. Hogget is the middle stage. In the United Kingdom, hogget refers to animals aged 11 to 24 months. Australian butchers use the term for animals between 13 and 24 months. Mutton is the meat of a sheep over two years old. This meat comes from a female ewe or a castrated male called a wether. These older sheep have more than two permanent incisors in wear.

Specific diets and environments create unique varieties of meat. Milk-fed lamb, or suckling lamb, comes from unweaned animals. These lambs are typically 4 to 6 weeks old and weigh between 5.5 and 8 kg. In Spain, these small cutlets are called chuletillas. In other regions, they are known as lechazo. This meat is often more expensive because of its fine texture. In Australia, some sheep eat atriplex plants to produce saltbush mutton. In coastal areas, sheep graze on salt-tolerant herbs like samphire. This produces saltmarsh lamb, which is popular in the United Kingdom. In Tasmania, saltgrass lamb comes from sheep on Flinders Island.

Butchers divide the carcass into specific sections for cooking. The forequarter includes the neck, shoulder, front legs, and ribs. The hindquarter contains the hip and the rear legs. The loin is the middle section between these two parts. Lamb chops can be cut from the rib, loin, or shoulder. Rib chops include a rib bone, while loin chops include only a chine bone. Because forequarter meat has more connective tissue, it is best for slow cooking. This includes methods like braising, stewing, or American barbecuing.

Cultural traditions shape how different societies use sheep meat. In central Italy, abbacchio is a vital dish for Easter and Christmas.

This is a protected product with the European Union's PGI mark. In the Lazio region, historical rules once forbade the slaughter of abbacchio except during specific holidays. Today, the region celebrates this food through sagre, which are country festivals. In South Asia, the term "mutton" is used differently. It usually refers to goat meat rather than sheep. Many people there eat mutton curry made from goat.

Economic and regulatory factors also influence the meat industry. In the United States, mutton consumption declined after World War II. Most sheep meat sold there comes from animals 12 to 14 months old. Federal rules in the U.S. allow all sheep products to be marketed as "lamb." The USDA also uses terms like "spring lamb" for animals slaughtered between March and October. In the UK, the Mutton Renaissance Campaign has worked to bring back the popularity of older sheep meat. This is difficult because mutton is harder to find in modern supermarkets.

Understanding sheep meat requires looking at both biology and culinary science. The maturation of connective tissue makes mutton and hogget tougher than lamb. This toughness makes them ideal for casserole-style cooking. A famous example is the Lancashire hotpot in the UK. Mutton and hogget also have higher concentrations of species-characteristic fatty acids. This chemical difference is why they taste so much stronger. Whether it is a roasted leg of lamb or a slow-cooked mutton stew, the age of the animal dictates the entire cooking process.
