Sheep meat is one of the most common meats eaten around the world.

People usually divide this meat into three main types based on the age of the sheep. Lamb comes from very young sheep that are less than one year old. Because they are young, the meat is small and very tender.

Hogget is the name for sheep that are a bit older. In the United Kingdom, hogget comes from sheep aged 11 to 24 months. In Australia, butchers use the term for sheep between 13 and 24 months old. Mutton is meat from older sheep that are over two years old.

How you cook the meat often depends on how old the sheep was. Lamb is very soft, so it is often grilled or roasted. Some people prize milk-fed lambs, which are only four to six weeks old. These lambs weigh between 5.5 and 8 kilograms.

They also have tougher flesh because of how their tissues grow. This makes them perfect for slow cooking in a pot. A famous example is the Lancashire hotpot in the UK.

Different parts of the sheep are used for different meals. A butcher might cut the sheep into the forequarter, the loin, or the hindquarter. The forequarter includes the neck, shoulder, and ribs. The hindquarter includes the hip and the rear legs.

The loin is the middle part between the two. You can find lamb chops in the rib, loin, or shoulder areas. Some chops, like rib chops, have a bone. Others, like loin chops, only have a small chine bone. In the United States, the USDA has special rules for labeling. They call meat from animals slaughtered between March and October "spring lamb."

History shows how these foods connect to local cultures. In central Italy, a lamb dish called abbacchio is very important.

In the Lazio region, people have used abbacchio for many centuries. It is a staple food for rural communities there. In ancient times, people were only allowed to eat abbacchio during Easter and Christmas. Today, the region even holds special festivals called sagre to celebrate it. In the United States, mutton was very popular in the early 1900s. However, people there have eaten much less mutton since World War II ended.

Names for these meats can change depending on where you live. In South Asia, the word "mutton" usually means goat meat.

People there often make a dish called mutton curry using goat. In Australia, some sheep graze on special plants like saltbush. This creates a specific type of meat called saltbush mutton. In the UK, sheep that eat plants in coastal salt marshes produce saltmarsh lamb. This meat is popular in places like Wales and the Somerset Levels. Even the way sheep eat can change how their meat tastes.
