Lactococcus lactis

life science Maturity 11-13 Next article →

Lactococcus lactis is a tiny living thing called a bacterium.

It is a gram-positive bacterium, which is a way scientists group certain microbes. These bacteria are very helpful in our daily lives. They are used to make many foods like buttermilk and cheese. They even help make things like beer, wine, and pickled vegetables. This tiny microbe is a big part of the dairy industry. Scientists consider it generally recognized as safe for people to use.

How does this bacterium work to make food? It uses a way of working called fermentation.

When added to milk, the bacteria use enzymes to get energy. They eat a sugar in the milk called lactose. As they eat, they create a byproduct called lactic acid. This acid makes the milk curdle, which means it clumps together. These clumps are called curds, and they are used to make cheese. This process is how we get cheeses like Brie, Cheddar, and Parmesan.

Scientists have learned a lot about where these bacteria come from. They are usually found in dairy or in plants. Some experts think they moved from plants to milk a long time ago. This happened through a process called genome erosion.

In this process, the bacteria lost or turned down genes they did not need in milk. They also turned up genes that help them move nutrients. This helped them adapt to their new home in dairy products.

There are many interesting facts about this microbe. It is a coccus, which means it is shaped like a little ball. They often grow in pairs or short chains. They are usually between 0.5 and 1.5 micrometers long.

In 2010, the state of Wisconsin tried to name it their official state microbe. A bill was introduced in November 2009 by several representatives. The Assembly passed the bill on May 15, 2010, but the Senate did not adopt it.

Lactococcus lactis is also very important in medicine. It was the first genetically modified organism used to treat human disease.

Scientists can change its genes to carry special proteins into the body. One way is to help treat inflammatory bowel diseases. They can also use a peptide called KISS1 to help fight cancer cells. This makes the bacterium a very exciting tool for the future of science.
