They are different from the table knives we use for eating. While a large chef's knife can do many jobs, other knives are made for specific tasks.

A heavy meat cleaver handles tough work, while a small paring knife is for delicate jobs. A bread knife uses a jagged edge to slice through crusty loaves. Each type of knife helps a cook work with skill and ease.

Making a knife involves choosing the right metal and shape.

Most blades are made of steel, which is a mix of iron and carbon. Carbon steel is easy to sharpen, but it can rust if not dried well. Stainless steel uses chromium to resist rust and stays cleaner.

Some makers use a method called san mai. This means they sandwich hard steel between layers of tougher steel. This keeps the edge sharp while making the blade strong.

History shows that certain cities became famous for making great knives.

In Europe, places like Sheffield in England and Solingen in Germany were famous. Thiers in France was known for the French point style. In Japan, many different areas make unique knives.

Sakai in Osaka makes blades with a curved sheep's foot tip. This is different from the square-tipped style found in Tokyo. These traditions help keep special crafting skills alive today.

Knives come in many different shapes and styles.

The tip might be triangular, round, or even a square shape. Some blades have serrations, which are tiny teeth that act like a saw.

These are called Granton edges, and they stop food from sticking to the metal. This makes slicing meat or cheese much smoother.

You might see a chef use a specialized tool for every ingredient. Some people even use ceramic blades made from zirconium dioxide. These are very hard and do not change the taste of food.
