Minnoch was born in 1941 in Seattle. He struggled with being very heavy since he was a child. By the age of 12, he weighed 180 pounds. He later worked as a taxi driver for 17 years. He also owned a taxi company on Bainbridge Island. People on the island knew him as a warm and funny family man.

In 1978, Minnoch's health became very difficult. He tried to lose weight by eating almost nothing. He followed a diet of only 600 calories of vegetables a day. He also took a medicine called a diuretic to help his body. This medicine is used to remove extra fluid. However, he became very weak and could not leave his bed. In March 1978, he finally went to the hospital.

Moving Minnoch to the hospital was a very big job. Firefighters had to remove a window from his home. They placed him on a thick piece of plywood. It took over a dozen firefighters and rescue workers to help. They used a special stretcher to move him to the University of Washington Medical Center. At the hospital, thirteen attendants were needed just to roll him over. Doctors found he had a condition called massive edema. This is when the body holds too much extra fluid.

Doctors could not use a regular scale to weigh him. An expert named Robert Schwartz estimated his weight. He thought Minnoch weighed about 1,400 pounds. Some experts thought he might have been even heavier. Minnoch stayed in the hospital for two years. During this time, he lost over 500 pounds. This was the largest weight loss ever recorded at that time. He hoped this would give him a new life.

After he left the hospital, Minnoch gained much of the weight back. He was sent back to the hospital in 1981. He died on September 4, 1983, at the age of 41. His heart stopped, which is called cardiac arrest. He was buried at Mount Pleasant Cemetery in Seattle. His casket was made of thick plywood. It was so large that it took up two burial spots. It took 11 men to move his casket to the burial place.
