The Honeycrisp is a very special kind of apple.

It is loved for its unique taste and texture. People enjoy its mix of sweetness and tartness. The apple is also famous for being very crunchy. This crunch happens because the cells inside are larger than most other apples. When you bite down, these cells rupture or pop. This makes the fruit feel extra juicy in your mouth. Because it tastes so good, it is now the official state fruit of Minnesota.

Growing Honeycrisp apples is a hard job for farmers. The trees need another apple variety nearby to help them make fruit. This is because the flowers are self-sterile. Farmers must also be very careful during the harvest. The skin on these apples is quite thin. This means they can be pierced by the stalks of other apples. Workers must clip the stalks by hand to prevent damage. Honeycrisp apples also bruise easily and do not last long in storage. About 23% of the harvest might also have bitter pit from a lack of calcium.

Scientists at the University of Minnesota created this apple. They worked at the Horticultural Research Center in Twin Cities. They first gave it the name MN1711 in 1974. It was later patented in 1988 and released in 1991. Pepin Heights Orchards delivered the very first ones to grocery stores in 1997. The Honeycrisp changed the history of the apple industry. By 2011, the patents had earned more than $10 million. This money was shared between the inventors, the college, and research funds.

We can use science to find out where the Honeycrisp came from. For a long time, people thought it was a mix of Macoun and Honeygold. However, genetic fingerprinting in 2004 showed this was not true. One parent was a hybrid of Keepsake, Frostbite, and Northern Spy. The other parent was a variety called MN1627. The grandparents of that side were Duchess of Oldenburg and Golden Delicious. In 2022, botanists at Cornell University even mapped the entire genome of the apple. This helps us understand exactly how the fruit is built.

The Honeycrisp is so popular that it has many apple children. These are called progeny. Many new varieties sold in North America come from the Honeycrisp. Some examples include the SweeTango and the Cosmic Crisp. There is also the Rave, the Sunflare, and the EverCrisp. In the United States, the Honeycrisp is a top seller. In 2025, it made up 12% of the American apple market. It is even grown in New Zealand to help supply fruit to North America.
