He is well known for a special way of cooking called multi-sensory cooking. This means he wants people to use all their senses when they eat. He wants you to hear, see, smell, and feel your food. He believes eating involves all our senses at the same time. This approach helps to capture the imagination of the people eating.

His work has changed how many people think about a meal.

One way he works is through something called food pairing. This involves finding ingredients that have similar tiny parts inside them. He uses these similarities to create very unusual combinations. For example, he once served white chocolate with caviar. He also made salmon poached in a liquorice gel with asparagus. He uses a scientific approach to ask questions about everything in the kitchen. He even uses tools like liquid nitrogen to help make his dishes.

Heston's interest in food began when he was sixteen years old. He was on a family holiday in Provence, France. He visited a famous restaurant called L'Oustau de Baumanière. He loved the sounds of fountains and the smell of lavender. This trip inspired him to learn how to cook. He studied cookbooks and learned from many different French chefs. Later, a book about the science of cooking changed his whole attitude. He decided to question everything about how food is made.

In 1995, Heston bought a run-down pub in Bray, Berkshire. He opened it as a restaurant called The Fat Duck.
