Many different kinds of griddles exist around the world. In the Middle East, people use a saj. A saj is a curved griddle used for flatbread. In Latin America, a budare is used. These are made from stone or clay. Modern versions are metal and called comals.

In Great Britain, a griddle is also called a girdle. A traditional Scottish girdle is a flat iron disk. It has a handle to hang it over a fire. People use it to make scones and oatcakes. In Wales, a bakestone is used for Welsh cakes.

Griddles can be small or very big. Some are built into a stove. Large ones in restaurants can be six feet wide. They use heat from gas, wood, or electricity. Most big griddles are made of steel.
