A griddle is a specialized cooking device featuring a broad, typically flat surface.

In the United Kingdom, this tool is often called a girdle. Griddles serve many purposes in both homes and professional kitchens. They can be small, movable pans or large, built-in kitchen ranges. Some are compact machines with their own heating systems. These devices allow cooks to prepare a wide variety of foods efficiently. They are essential tools for creating everything from breakfast items to complex meat dishes.

There are several ways a griddle can function and provide heat. Heating can be applied directly to the surface or indirectly. Direct heat might come from a flame fueled by wood, coal, or gas. Indirect heat often comes from electrical elements. In a professional setting, commercial griddles usually run on electricity, natural gas, or propane. The cooking surface itself can be flat or it can have grooves. These grooves are often used to manage fats or liquids during the cooking process. Modern units may even use a thermostat to control the temperature precisely.

Materials used for griddles vary depending on their intended use. Residential models are often made of cast iron, aluminum, chrome steel, or carbon steel. Some versions are also designed with non-stick surfaces for easier cleaning. Commercial-grade griddles are built for heavy, constant use. The vast majority of these professional units are made from A36 steel. Some commercial models use stainless steel or composites of stainless steel and aluminum. The plates themselves can be made of cast iron, polished steel, cold-rolled steel, or even finished with chrome.

The history of the griddle is quite long. The word appears in English records dating back to the 13th century. It likely evolved from the Anglo-French word "gridil." This term likely descended from the Latin word "craticula," which means a small griddle. It may have also come from the Latin "craticulum," meaning fine wickerwork. Early versions of the griddle were very simple. People used stone or brick slabs, or even shallow platters filled with sand. Some of these stone slabs were heated before food was added, while sand-filled platters were heated after.

Different cultures have developed unique griddle traditions over many centuries. In the Middle East and South Asia, people use a convex griddle called a saj.

This curved shape is perfect for cooking various types of flatbread. In South Africa, a popular griddle is known as a skottle. These were originally made from used farm harrowing discs. Today, they are often used with a large steel tripod and a 7kg gas cylinder for overlanding. In Latin America, a traditional griddle is the budare, which is made from stone or clay. It is used for items like tortillas, arepas, and casabe. Modern metal versions of these are called comals.

Great Britain also has distinct regional griddle traditions. In Scotland, a traditional girdle is a flat wrought iron disk. It features an upturned rim and a semicircular hoop handle. This design allows the cook to suspend the girdle over a fire using a central chain and hook. It is used to make scones, bannocks, pancakes, and oatcakes. In Wales, a similar tool is called a bakestone. This is a circular, one-piece cast iron tool used for Welsh cakes, pikelets, and crepes. In the United States, historical griddles in Upstate New York served as lids for openings in wood or coal stoves.

Commercial griddles are much larger than the tools found in a home kitchen. These professional machines can be 2 to 6 feet wide. They can also be 18 to 30 inches deep. This large surface area allows restaurants to cook many items at once. Chefs use them to prepare breakfast foods like pancakes, French toast, eggs, and bacon. They are also used for stir-fries and meat dishes such as hamburgers, steaks, and chicken breasts. Whether in a small home or a large restaurant, the griddle remains a vital part of cooking culture.
