language culture Maturity 5-7 Next article →

A pancake is a flat, starch-based batter bread. It is often thin and round. People also call them hotcakes, griddlecakes, or flapjacks. Most pancakes are prepared from a batter containing starch. This batter frequently includes eggs, milk, and butter. To cook them, you pour the mixture onto a hot surface. This surface might be a griddle or a frying pan. Pancakes are a global food that people enjoy at many different times.

The process of making a pancake depends on the desired texture. To make a thin pancake, you use a simple batter. For example, a crêpe is a thin pancake of Breton origin. It is cooked on one or both sides in a special pan. This method creates a lacelike network of fine bubbles. To make a thick pancake, you add a leavening agent. Baking powder is a common leavening agent used in North America and Scotland. This agent creates a fluffy structure. If you use buttermilk instead of milk, the pancake becomes a buttermilk pancake. This addition gives the bread a tart flavor.

There are many distinct types of pancakes worldwide. Some use different flours to change the taste and texture. Buckwheat flour can make a buckwheat pancake. This category includes varieties like blini, kaletez, ploye, and memil-buchimgae. If you use potato as a major part of the batter, you make a potato pancake. In South Asia, many styles exist without any added raising agents. In North India, cheela can be sweet with jaggery or savory with gram flour. Southern Indian varieties like dosa and uttapam use fermented rice and urad bean batter.

Pancakes have a very long history. Archaeological evidence suggests that prehistoric societies likely ate them. The Ancient Greeks made pancakes called tēganitēs or tagēnitēs. These names come from the Greek word tagēnon, which means frying pan. These early pancakes used wheat flour, olive oil, honey, and curdled milk. They were a common breakfast food. The Ancient Romans called their fried sweets alia dulcia. In the 15th century, the Middle English word pancake appeared in English.

Different regions associate pancakes with specific traditions and numbers. In Britain and the Commonwealth, they are linked to Shrove Tuesday. This day is also known as Pancake Day. Historically, people used perishable ingredients on this day. They did this before the fasting period of Lent began. In South Africa, pannekoeke are a staple at Dutch Reformed Church fêtes. In Uganda, kabalagala are made from ripe ndizi bananas and cassava flour. These are often served as a breakfast or a snack.

Some pancakes serve many purposes at once. In Ethiopia and Eritrea, the injera is a yeast-risen flatbread. It is made from teff flour and has a spongy texture. Injera is very significant because it acts as food, a plate, and an eating utensil. People use the right hand to tear pieces of injera. They use these pieces to pick up stews known as wat. The injera soaks up the juices and flavors. When the injera "tablecloth" is finished, the meal is over.

Modern food production has also changed how we interact with pancakes. Commercially prepared pancake mixes are available in many countries. Some companies, like Eggo, even sell frozen pancakes. In Japan, you can find unique styles like okonomiyaki. This is made from flour, egg, and cabbage. There are also fluffy soufflé-style pancakes. These are taller and fluffier than the American versions. In Indonesia, the rice flour pancake serabi is served with kinca, which is a thick coconut sugar syrup.

Finally, pancakes connect to various culinary systems and travel routes. In Southeast Asia, banana pancakes are popular in many cafes. This has created the term "Banana Pancake Trail." This refers to travel routes used by backpackers in Malaysia, Thailand, Cambodia, and Vietnam. In Nepal, the Newar people make chataamari. This savory rice pancake is sometimes called "Newari Pizza." It is served similarly to American pizza. Whether sweet or savory, pancakes remain a versatile part of human culture.
