The name comes from the Hungarian word for a cattle herder or cowboy. Long ago, Hungarian shepherds lived on the big plains called the Puszta. They looked after huge herds of cattle. These herds were sometimes tens of thousands of animals strong. The herdsmen would slaughter some cattle along their way. This meat provided them with a way to make food.

Today, many people in Hungary eat goulash as a soup. They call this gulyásleves, which means gulyás soup. To make it, you start by cutting meat into chunks. Most people use beef, but some use mutton. You brown the meat with sliced onions in oil or lard. Then, you add water and let it simmer for a long time.

You can also add potatoes, carrots, and caraway seeds. A special part is adding small egg noodles called csipetke. These are made by pinching tiny bits of dough. This name comes from the Hungarian word for pinch.

The history of this dish is very old. Some say it traces back to the 10th century. Back then, shepherds ate stews made of meat. They would sun-dry the meat to keep it. Then, they packed it into bags made from sheep stomachs. They only needed to add water to make a meal. Paprika was not part of the dish at first. That red spice did not arrive in Europe until the 16th century.

There are many different ways to cook goulash. One way is Bográcsgulyás, which is cooked in a big iron kettle. This kettle is called a bogrács. You cook it outdoors over an open campfire. You only need a tripod and a chain to hold it. Some people make a version with beans called babgulyás. Others make a meatless version called hamisgulyás. In some places, people use different meats like pork or chicken. You can even find versions made with venison or wild boar.
