Cooks also aim for five colors in every dish. These colors are white, green, yellow, red, and black. Many dishes use rice instead of wheat. This means foods like rice noodles and rice paper wrappers, called bánh tráng, are naturally gluten-free. People love how these meals feel fresh and healthy.

Making these meals involves using many fresh ingredients.

Recipes often use lemongrass, ginger, mint, and lime. They also use things like Saigon cinnamon and bird's eye chili. Many cooks avoid using too much oil or dairy. Instead, they rely on herbs and vegetables to add flavor. Some dishes are made by briefly cooking meat or stir-frying vegetables. This keeps the textures interesting, like having something crunchy next to something soft.

Long ago, contact with China introduced foods like wontons and wheat noodles. The Vietnamese took these and added their own styles. Later, the French brought new things like baguettes and coffee. This led to the famous bánh mì, which is a baguette filled with meat. The French also brought onions, potatoes, and broccoli. Even the names of these foods show their history. For example, potatoes are called khoai tây, which means "western yam."

Different parts of Vietnam have their own special tastes.

This means balancing "heating" and "cooling" foods to help the body. For example, duck meat is considered "cool," so it is served with "warm" ginger. Spicy foods are "hot," so they are balanced with "cool" sour flavors. This balance applies to tastes, colors, and even nutrients. It shows how much care goes into every single meal. Even simple ingredients are chosen to create a perfect harmony.
