Long ago, Hungarian shepherds made this dish. The name comes from a word for cattle herders. These herders lived on the big plains. They used meat from the animals they kept.

Today, many people eat goulash as a warm soup. In Hungary, it is called gulyás. It often has beef, onions, and potatoes. A key part is a red spice called paprika. This spice was added to the dish after the 16th century. People also add carrots and caraway seeds. Some even add small noodles called csipetke. These are made by pinching bits of dough.
