In parts of northern Mexico, people add hominy. Hominy is a type of corn. Some people make a white version called menudo blanco. This version does not use red peppers. In the United States, people often add beef or pig's feet.

Many people love to eat this soup together. Families often make it for big feasts. They might eat it after a wedding. In Arizona, workers held parties with menudo to celebrate births. It takes a long time to cook the meat. Because it takes so long, many people work together to make it. Some towns even have festivals for this soup. In California, a festival helps raise money for student scholarships. In Texas, a big contest called the Menudo Bowl happens every year. People from both sides of the border come to watch.
