Tendon as food

language culture Maturity 5-7 Next article →

Many people in Asia love to eat beef tendon. Tendon is a part of the animal. It is very tough and fibrous. It has a lot of collagen. This is a protein that makes it feel soft. You must cook it for a long time. Some cooks boil it for eight hours. This makes it feel like fatty meat. Other cooks deep fry it. Fried tendon can taste like chicharrón, which is fried pork belly.

Different lands have their own ways to make it. In China, people eat it at dim sum meals. In Indonesia, it goes inside meatballs called bakso. You can also find it in noodle dishes. In Japan, it is a part of a dish called oden. Korean cooks often steam it with high pressure. This makes it very soft. They eat it with soy sauce and green onions. In the Philippines, they call it litid. They boil it until it is sticky. It is used in a soup called bulalo. You can also find tendon in pho in Vietnam.
