Emmer is a special type of wheat that has been important for a very long time.

It is a hybrid species, which means it was formed from two different plants. Along with einkorn, it was one of the very first crops people grew in the Near East. Today, it is often called a relict crop because it grows mostly in mountainous parts of Europe and Asia. In Italy, emmer is one of three grains known as farro. Many people value it because it can grow well even in poor soil. It is also very good at resisting diseases like stem rust in wet areas.

Growing emmer involves a very interesting way of working with nature. The wild version of the plant has long, sharp spikes called awns. These awns help the seeds bury themselves in the ground to grow. At night, when it is humid, the awns move in a way that looks like a swimming frog kick.

This movement pushes the grain into the soil. During the day, the awns relax as the air dries out. Small hairs on the awns act like hooks to keep the seed from popping back out. This clever design helps the wild plant plant its own seeds.

Humans have been using emmer for thousands of years.

Archaeologists found emmer grains at a site in Israel called Ohalo II that are from 17,000 BC. This shows that hunter-gatherers ate it long before they started farming it. Scientists believe the wild emmer might have started in the Karaca Dağ mountains in Turkey. In the late 1800s, botanists like Friedrich August Körnicke and Aaron Aaronsohn described the wild plant. Aaronsohn even made a big discovery in 1906 when he found wild emmer growing in Rosh Pinna, Israel. These discoveries helped us understand how our food began.

Emmer has played a huge role in many different cultures. In ancient Egypt, it was a main crop used to make bread and beer. Some emmer was even found preserved in the underground chambers of the Step Pyramid at Saqqara. In the Middle East, it grew in the hill country from Israel to Iran. It was so important that it was one of the grains used in ancient religious ceremonies. In Italy, certain mountain areas like Tuscany grow emmer as a special product. This product has a protected name to show its high quality and history.

Today, you can find many ways to enjoy this ancient grain. In Armenia, people make a delicious emmer pilaf with onions and oil. They also make a warm porridge called kashovi, sometimes served with chopped lamb. In Italy, emmer is often called "true" farro because it is high quality. You can add it to salads, soups, or even sweet desserts. While it is a healthy choice, people with gluten issues should still avoid it. It remains a wonderful link to the very beginning of human farming.
