life science Maturity 9-11 Next article →

Einkorn is a very old type of wheat. Its name means "single grain." This is because each part of the plant holds only one seed.

There are two kinds of einkorn. One kind grows in the wild. The other kind is grown by people. Wild einkorn is short. It does not make many seeds. When the seeds are ripe, the plant head breaks apart. This lets the seeds fall to the ground. This helps new plants grow.

The kind people grow is different. Its seed head stays together. This makes it easier for humans to harvest. People chose these plants because they were easier to pick. Over time, these plants grew larger seeds. This is called domestication.

Einkorn has tough shells called glumes. These shells wrap tightly around the grain. It is hard to take them off. You can eat the grain in porridge or boiled. It is very nutritious. It has more protein than some modern wheat. It can also grow in dry soil where other wheat cannot grow.
