A dessert is a sweet dish that often ends a meal.

People enjoy many different kinds of treats like cake, ice cream, or biscuits. Some cultures even turn savory foods into sweet desserts. In many restaurants, a dessert course is a special part of the meal. However, some parts of the world do not have a specific course for sweets. The word itself comes from the French word "desservir." This means "to clear the table."

In the past, desserts were served only after the table was cleared.

Making desserts involves many different ingredients and steps. Most sweets use sugar from cane, palms, or honey. Flour or starch gives a dessert its structure. Fats like butter or lard help make things like pie crusts flaky.

Eggs are also very important in many recipes. Egg yolks make things rich and creamy. Egg whites can help a cake rise or stay firm. Sometimes, chefs add salt or lemon juice to balance the sweetness.

History shows us how sweets have changed over a long time. In ancient Mesopotamia and ancient India, people fed sweets to their gods.

Dried fruit and honey were likely the very first sweeteners used. Later, the spread of sugarcane changed everything. Sugarcane was grown in India before 500 BC. By AD 500, it could be made into crystals for easy travel. Sugar reached China by AD 600 and Macedonia by 303 BC. In Europe, sugar was rare and expensive until the twelfth century.

There are many large groups of desserts to explore. Cakes are sweet, tender breads often used for birthdays or weddings.

Puddings are thickened with starch, while custards use eggs to get firm. You might also enjoy confections, which are sweets made mostly of sugar or honey. Chocolate is another favorite made from cacao beans.

Desserts connect people to their own history and home. Many recipes are passed down through families or come from specific regions. For example, Cantonese cuisine includes a sweet, warm soup called tong sui.

In the United Kingdom, people might call dessert "pudding" or "afters." In North America, people often use the word "cookie" for many small sweets. Even the way we make them has changed. The Industrial Revolution allowed for mass-produced and canned treats. By the 1920s, frozen desserts became very popular for everyone to enjoy.
