Clarified butter is a special kind of cooking fat.

It looks like clear, yellow butter. This fat is very useful in the kitchen. It stays good for a much longer time than fresh butter. This happens because the water is gone. Without water, it is less likely to go bad. It is also safe for many people. Most people with a lactose intolerance can eat it. This is because it has almost no lactose or casein left.

Making this fat is a neat process. First, you must melt the regular butter. Then, you wait for the parts to separate. The water turns into steam and evaporates. Some milk parts, called whey proteins, float to the top. You can skim these off the surface. Other milk solids, called casein, sink to the bottom. Finally, you pour off the clean butterfat on top.

You can even use a tool called a separatory funnel to help.

Many different cultures have made this for a long time. In France, it was an ancient way to keep butter fresh. People in Normandy used it to send butter on long trips. In Isigny, they called it beurre fondu. In Croatia, people called it maslo to keep it fresh at room temperature. In Yemen, people have a special custom for making it. They add hot water to the butter first. They also add roasted wheat kernels or ground fenugreek seeds.

Different places create unique flavors with this fat. In the Indian subcontinent, people make ghee. They cook the butter longer during the separation. This makes the milk solids caramelize. It gives the ghee a nutty flavor. In Mongolia, people call it "yellow oil." They often drink it with traditional milk tea. In Ethiopia, they use a seasoned version called niter kibbeh. In North Africa, they use a salted version called smen.

Clarified butter is very helpful for certain cooking tasks. It has a high smoke point. This means it can get much hotter than regular butter. It will not burn as easily when you sauté food. It is also used in famous sauces. You might find it in béarnaise or hollandaise sauces. Whether it is called ghee or beurre fondu, it is a prized ingredient. It connects many different foods and traditions around the world.
