Clarified butter is a special kind of cooking fat.

It is clear and yellow. To make it, people melt regular butter. This lets the parts of the butter separate. Water turns into steam and leaves. Some milk parts float to the top. Other parts sink to the bottom. You can pour off the clear fat on top. This fat is the clarified butter.

This butter is great for cooking. It has a high smoke point. This means it can get very hot without burning. It also stays good for a long time. It does not have water or milk solids. Because of this, most people with milk allergies can eat it.

Many cultures have their own ways to make it. In India, they make ghee. They cook it longer to make it taste like nuts. In France, people used it to keep butter fresh. They used it to make sauces like hollandaise. In Yemen, people add hot water and wheat to the mix. In Mongolia, people drink ghee with milk tea.
