Cider apples are a special group of apples.

Most people do not eat them. They can taste bitter or very dry. Instead, farmers grow them to make cider.

To make good cider, apples need certain things. They need high sugar levels. This sugar helps the juice turn into cider. They also need tannins. Tannins are parts that add deep flavor. Some apples are also sharp. This means they have high acid. A sharp taste adds a "bite" to the drink.

In 1903, experts in England made a system to group these apples. They looked at acid and tannins. They found four main types. "Sweets" have low acid and low tannins. "Sharps" have high acid but low tannins. "Bittersweets" have low acid but high tannins. "Bittersharps" have both high acid and high tannins.

Bittersharps can be hard to eat. Some people even called them "spitters." Makers often mix many apple types together. This helps them find a perfect balance. In the U.S., many ciders use dessert apples. These are apples meant for eating. They are often sweets or sharps.
