Bamboo shoots are the young, edible sprouts of bamboo plants.

These shoots emerge from the ground as new parts of the plant. Many people across Asia enjoy them as a delicious vegetable. You can find them in many different forms. Some people use fresh shoots for cooking. Others use dried shoots or even canned versions. They are used in many tasty broths and many different dishes.

There is an important step to follow before eating raw shoots. Raw bamboo contains natural toxins called cyanogenic glycosides. These toxins are also found in a plant called cassava. To make them safe, you must destroy the toxins with heat. Most people boil the shoots in water before using them. In some places, people slice the shoots and soak them. They might soak them in water for two or three days. They change the water every day to help remove the toxins.

Many different species of bamboo are harvested for food. Only about one hundred species are used regularly for eating. Some species, like Bambusa vulgaris, grow in tropical areas. Others, like Phyllostachys edulis, grow in China and Taiwan. In Japan, people often harvest Bambusa oldhamii in the spring. These shoots are popular because they are sweet and crisp. Older shoots can taste bitter or acrid. People slice those older shoots very thin and boil them many times.

Different cultures have special ways to prepare these shoots. In Japan, menma is a common topping for ramen noodles.

In the Philippines, people make ginataáng labóng using coconut milk and chilies.

They also contain seventeen different amino acids.

Bamboo shoots connect many different parts of the world. They are a part of traditional food in many countries. In India, people in Assam use them in recipes called khorisa. In the Chittagong Hill Tracts of Bangladesh, the Jumma people prepare them with shrimp paste. People in Indonesia use them to make gulai rebung with coconut milk. Even giant pandas and red pandas eat raw bamboo. The microbes in their guts help them digest the toxins. This shows how special bamboo is to both humans and animals.
