This plant is native to Eurasia, including parts of Europe and Asia.

Growing asparagus involves a few interesting steps. Farmers plant the crowns in the winter. When spring arrives, the first shoots begin to poke out of the ground. Some farmers grow white asparagus using a special way. They cover the shoots with soil so they cannot see the sun. Without sunlight, the plant cannot perform photosynthesis. This keeps the shoots white instead of green.

Other varieties, like purple asparagus, were developed in Italy. Purple asparagus has more sugar and less fiber than green ones.

People have known about asparagus for a very long time. Ancient Roman Emperor Augustus even used it in a famous saying. He used the phrase "faster than cooking asparagus" to describe quick action. In the 1st century AD, a collection of recipes called De re coquinaria included asparagus. Later, a Greek physician named Galen called it a beneficial herb. European settlers brought the plant to North America around 1655. A Dutch immigrant named Adriaen van der Donck wrote about it in the New World.

There are many facts to know about how it is produced. In 2023, the world produced 8.6 million tonnes of asparagus. China produced a huge amount, which was 87% of the total. The plant is also very healthy for you. Raw asparagus is 93% water and only 4% carbohydrates. It is a great source of vitamin K and copper. It also provides iron and several B vitamins. Some people even use its genome to study how sex chromosomes work in plants.

Asparagus is a very common part of many meals. You might see it stir-fried in Asian cooking with shrimp or beef. In France, people often boil it and serve it with Hollandaise sauce. It can even be pickled and kept for several years. You might notice a strange smell in your urine after eating it. This happens because the plant contains asparagusic acid. When you digest it, your body creates sulfur compounds. These compounds are what cause that unique and strong scent.
