Wasabi is a special plant from Japan.

It is part of the same family as mustard. People use the stem, called a rhizome, to make a spicy paste.

To make the paste, you must grate the rhizome. Some people use sharkskin to grate it. Today, many use metal graters called oroshigane.

This paste is very pungent. That means it has a strong smell and taste. Unlike hot chili peppers, wasabi hits your nose more than your tongue. The spicy feeling does not last long. It goes away quickly after you eat or drink. Some people even use wasabi vapor to help wake people up in an emergency!

Wasabi is hard to grow. It needs cool, flowing water and lots of shade.

Because it is hard to grow, real wasabi can be expensive. Many places use horseradish instead. This is often called "western wasabi." You can also find wasabi flavor on snacks like peas.

In Japan, people even pickle the leaves in sake lees. This is called wasabizuke.
