The root has a very strong, sharp taste. When the root is whole, it does not smell much. But a change happens when you cut or grate it. Tiny parts in the plant cells let out an enzyme. This enzyme acts on other parts to make a mustard oil. This oil is called allyl isothiocyanate. It can sting your eyes and your nose.

This oil helps the plant stay safe from animals that might eat it.

People have used horseradish for a very long time. It was used as medicine in the Middle Ages. Some people mix the grated root with vinegar to make a sauce. In many places, people eat this sauce with meat. Some people even mix the root with red beetroot. This makes a red version called chrain.
