In Japan, people make many pickles. They also eat it in a soup called oden. In Korea, it is a main part of kimchi. This is a traditional fermented dish. Some daikon types are mild. Others can be spicy. One special kind is the watermelon radish. It has a bright pink center.

Farmers also use daikon to help the earth. They call it a tillage radish. The large root grows deep into the ground. It breaks up hard soil. This helps water and nutrients move easily. When the root decays, it leaves a hole. This makes it easier for next year's crops to grow. It also keeps nutrients in the soil. This helps plants stay healthy.
