A sauce is a liquid, cream, or semi-solid food used to prepare or accompany other dishes.

While people rarely eat sauce alone, it serves vital roles in cooking. It can add flavor, change texture, or improve the visual appeal of a meal. Sauces work by deepening existing flavors or providing a pleasing contrast to the main ingredients. For example, a tart lemon sauce might pair with a sweet white chocolate mousse.

A chef who specializes in making these mixtures is called a saucier.

Every sauce requires a liquid component to function. The method of preparation varies greatly depending on the desired result. Some sauces are uncooked mixtures, such as pesto or skordalia. Others require heat, like the warm hollandaise sauce.

In professional kitchens, chefs often use prepared bases like stocks or demi-glace. An integral sauce is created by using the juices released from the food being cooked. This creates a strong connection between the sauce and the main dish.

In classical French cuisine, sauces are categorized into specific groups. A major concept involves the "mother sauces," which serve as foundations for many other recipes. These five fundamental sauces include espagnole, velouté, béchamel, tomate, and hollandaise.

A sauce made by adding new ingredients to a mother sauce is called a "daughter sauce" or secondary sauce. For instance, adding grated cheese to a béchamel sauce creates a Mornay sauce. This system allows chefs to create hundreds of different flavor profiles from just a few starting points.

History shows that humans have used sauces for thousands of years. The word "sauce" likely comes from the Latin word salsa, meaning "salted."

The Ancient Romans used a fish sauce called garum, which is one of the oldest recorded European sauces. In China, the Rites of Zhou mentions doubanjiang, a soy bean paste. French sauce traditions date back to the Middle Ages. In the 19th century, the chef Marie-Antoine Carême created hundreds of original recipes. Later, Auguste Escoffier refined these lists in his famous work, the Guide culinaire.

Different cultures use sauces in unique ways to define their cuisines. In Western cooking, sauces often accompany meats or proteins that have been fried or roasted. In many Asian cuisines, sauces are often integrated directly into the dish, such as in curries.

Chinese cooking utilizes various preparations, including braising sauces, cooking sauces, and dipping sauces. In Indonesia, many people enjoy sambal, which is a broad term for many types of spicy sauces. Filipino cuisine often uses "toyomansi," a mix of soy sauce and kalamansi lime.

Italian cuisine offers a massive variety of regional sauces. Some are made specifically for meats, fish, or vegetables, such as salsa verde or bagna càuda. Others are famous for pasta, like the ragù alla Bolognese from Bologna.

Even desserts have specialized sauces, such as the egg and milk-based crema pasticciera used in Italy.

Latin American and Caribbean traditions also rely heavily on flavorful sauces. In Mexico, the Nahua people created mole, a complex sauce that can include chocolate, seeds, and chiles. In Argentina and Uruguay, people use chimichurri, an uncooked sauce, as a condiment for grilled meat.
