Rhizopus is a group of fungi that lives on many things. These fungi are saprophytic, which means they live on organic matter. You might find them on mature fruits and vegetables. They also grow on bread, peanuts, and even leather. Some species can be parasites on animals. A few types can cause a disease in humans called mucormycosis. This disease can be fatal.

These fungi grow using long, branching parts called hyphae. Most of these parts do not have cross-walls. This way of growing is called coenocytic. To make more of themselves, they use spores. For asexual reproduction, they make spores inside a round sporangium. This sporangium sits on a long stalk called a sporangiophore. These stalks grow from root-like parts called rhizoids.

Rhizopus can also reproduce through sexual reproduction. This happens when two compatible mycelia fuse together. When they join, they produce a dark zygospore. When this zygospore germinates, it grows into new colonies. These new colonies are genetically different from the parents. This helps keep the species diverse.

There are at least eight species in this genus. One is Rhizopus oligosporus, which helps make tempeh from soybeans. Another is Rhizopus oryzae, used for alcoholic drinks in Africa and Asia. Rhizopus stolonifer is known as black bread mold. It causes rot in strawberries, tomatoes, and sweet potatoes. This mold is also used to make cortisone and fumaric acid.

These fungi can be very helpful to the Earth. They increase nutrients in soil by breaking down certain toxins. They can also stop the growth of another fungus called Aspergillus flavus. One type, Rhizopus microsporus, may help reduce colon carcinogenesis in rats. It can also protect piglets from Escherichia coli infection. This happens by stopping the bacteria from sticking to intestinal membranes.
