They have a thin dough on the outside. Inside, they hold a tasty filling. Most ravioli are shaped like squares. Some are round. Others look like half-circles. These half-circles are called mezzelune.

People in Italy have made these for a long time. In the 14th century, books showed recipes for them. In Venice, people mixed herbs with cheese and egg. They cooked them in broth. In Rome, they served ravioli with boiled chicken.

Fillings change depending on where you are. In Rome, people use ricotta cheese and spinach. In Sardinia, they add lemon rind to the cheese. In Campania, they make round ravioli with ricotta. They do not use parsley there.

Many other places have similar foods. In Turkey, a dish called manti uses spiced meat. In India, gujhia is a sweet version. It is filled with sugar and dry fruits. Then, it is fried in oil. In Argentina, people eat large ravioli called sorrentinos. These often have meat and cheese inside.
