This stage is called postharvest handling. It starts the moment food leaves the plant or the ground. As soon as this happens, the food begins to change. It can lose moisture or get bruised.

Workers must care for the food to keep it safe. They use steps like cooling, cleaning, and sorting. Some food goes to a simple shed for shade. Other food goes to a large packing house. These big buildings use conveyor belts to move items. They also use walk-in coolers to keep things cold.

Every crop has its own needs. Some food must stay at a certain temperature. Some foods cannot be stored together. This is because they can have bad chemical changes. Scientists study postharvest physiology to learn more. This is the study of how plant parts live after picking. They learn how to slow down ripening. This helps food stay fresh for a longer shelf life. A shelf life is the time food stays good to eat. We check this by looking at taste, color, and feel.
