To make fruit, the plant must grow flowers first. These flowers bloom only at night and wilt by the next evening. Because they bloom at night, they need nocturnal pollinators. These are animals like bats or moths that visit the flowers. This help allows the plant to create fruit.

People have known about these fruits for a long time. Pitaya is native to southern Mexico and parts of Central America. This includes places like Guatemala, Costa Rica, and El Salvador.

One kind has pink skin and white flesh. This is the most common type of dragon fruit. Another kind has red skin and red flesh. This red color comes from a pigment called betalain. A third type has yellow skin and white flesh. Most fruits weigh about 300 to 600 grams. Some very large fruits can even reach 1,000 grams.

Eating pitaya is a fun experience for many people. The texture is a lot like a kiwifruit. This is because it has many small, crunchy black seeds.
