People make this bread using wheat flour and yeast. It is very common in the Mediterranean and Middle East. Many people know the version that has a soft pocket inside. This pocket makes the bread useful for many different meals. You can use it to scoop up tasty dips like hummus. It is also great for wrapping meats like gyros or falafel.

Making pita is a very interesting way to cook. Most pita is baked at very high temperatures. This heat turns the water in the dough into steam. The steam causes the bread to puff up quickly. This puffing creates the hollow pocket inside the bread. Some bakers make a version called "pocket-less pita" without this space. Traditional pita is often baked in a wood-fired oven. It tastes best when it is served warm and fresh.

This bread has a very long history. Evidence shows people made flatbreads 14,500 years ago. The Natufian people in what is now Jordan used wild grains. About 10,000 years ago, people began growing wheat and barley. By 4,000 years ago, bread was very important to the Babylonians. They used a tinûru, which is a type of oven. Historians think the modern pocket style is a later invention. No ancient texts or old cookbooks mention the steam-puffed pocket.

Different places have their own special names for this bread. In Turkey, people call a similar bread pide. Some pide is shaped like a boat and filled with meat. In Egypt, people call it eish baladi or simply eish. In Greece, the word pita usually means a pastry. This can include things like spanakopita, which is a spinach pie. In Cyprus, the pita is rounder and much fluffier. They often bake it on a heavy cast-iron skillet.

Many different cultures share these bread traditions. In the Balkans, people have names like lepinja or somun. These are often served with grilled sausages or meats. In the United Kingdom, pita is used for souvlaki wraps. Modern factories can now make thousands of pitas every hour. These machines use very hot ovens to bake bread in one minute. The bread is then cooled on belts before it is shipped.
