Pineapple juice

Pineapple juice is a liquid extracted by pressing the pulp of the pineapple fruit. This fruit grows on a tropical plant and comes in several different varieties. Manufacturers often use Smooth Cayenne, Red Spanish, Queen, or Abacaxi varieties to create commercial juice.

People use this juice as a standalone beverage or as a mixer for other drinks. It is also a key ingredient in smoothies, cocktails, and various culinary recipes. Beyond its use as a drink, it serves as a meat tenderizer in cooking.

The manufacturing process follows a specific sequence to ensure quality and safety. First, a cleaning machine uses brushes and sprays to remove stains and pesticide residue. Next, a peeling and extractor machine removes the skin to obtain the fruit pulp. A spiral juice extractor then squeezes the liquid from this pulp.

To ensure a smooth texture, a juice fine filter removes all solids, fiber, and colloidal particles. The juice then undergoes pasteurization, which is a heat treatment that stops enzymes from causing browning. Finally, a filling machine puts the sterilized juice into cans or bottles.

There are different forms of pineapple juice depending on how it is processed. Most commercial juice is liquid and sold in cans or bottles. However, it can also be made into a pineapple juice powder. This is created by spraying the liquid juice onto tapioca maltodextrin, which is a type of starch. This powder is highly versatile in the kitchen. It can be used in baked goods like muffins, scones, and cakes. It also works well in savory dishes like chutneys, stews, chilis, and sauces. Some people even use the powder to marinate fish or chicken.

The history of the pineapple in Hawaii is not fully documented. Some accounts suggest the fruit washed ashore from Spanish or Portuguese shipwrecks. Other stories say sailors brought the fruit to the islands. Don Francisco de Paula Marin, a horticulturalist, described planting pineapples in his 1813 journals. While he introduced many plants, he may not have been the very first to bring pineapples to Hawaii. The juice industry saw great success in the 1930s. In 1932, the Hawaiian Pineapple Company developed a method to clarify juice while preserving its aroma and flavor.

During the 1930s, the industry faced specific production limits. A commerce association had established strict rules for canning whole, cut, or crushed pineapple. In 1934, industry members agreed to these limits through a pool agreement. However, companies turned to pineapple juice to expand their commercial opportunities. They took advantage of a new trend where people wanted juice for breakfast drinks.
