They consist of a tasty filling wrapped in very thin dough. The name actually means "ear bread" or "dough ears." This name comes from the Komi and Udmurt languages. These dumplings are a big part of the food traditions in the Komi and Udmurtia regions. People in these areas hold the dish very close to their hearts. In the city of Izhevsk, there is even a monument built just for pelmeni.

Making pelmeni is a careful process that starts with the dough. You mix flour and water, and sometimes you add a few eggs. The filling can be many things like beef, pork, lamb, or fish. In cold areas, hunters often use venison for the meat. Some people even use mushrooms or a mix of meat and mushrooms. A traditional Udmurt recipe uses a specific mix of 45% beef, 35% mutton, and 20% pork. Cooks add spices like garlic, onion, and black pepper to make the meat flavorful. You can use a tool called a pelmennitsa to help make them quickly.

There are many interesting stories about where pelmeni began. Some people think they came from Siberia. They might have been a version of Chinese jiaozi brought by the Mongols. This idea is supported by the use of spices like black pepper. Other people think they started in the Ural Mountains and spread through Russia. Hunters may have created them because they are easy to carry on trips. In the winter, Siberian hunters would freeze pelmeni outside in the snow. This made them easy to store and carry in sacks through the taiga.

Cooking pelmeni is simple but requires watching the pot. You boil them in water or meat broth until they float. Once they float, you cook them for two to five more minutes.

You can serve them with melted butter or smetana, which is sour cream. Some people like to add vinegar, mustard, or even soy sauce. In Siberia, people might sprinkle them with vinegar and pepper. You can also fry them until they turn a beautiful golden brown. In the Far East, people often add soy sauce for extra taste.

Pelmeni are part of a huge family of dumplings found all over the world. They are cousins to many other foods you might know. These include Italian ravioli and tortellini, and Chinese wontons or jiaozi. They are also similar to Mongolian bansh and Japanese gyoza. In North America, people often use the word "pierogi" to describe these Eastern European treats. Pelmeni are different because their dough is very thin. They also usually have raw meat inside before they are boiled. Unlike pierogi, pelmeni are never served with sweet fillings.
